Instant sourdough discard personal pan pizza
The Non Recipe
I once saw someone in passing on social media dump some sourdough discard into a pan and fry it into a soft naan, or pita, or tortilla style bread. So I started doing this on a regular basis for breakfast and lunch. I did several different variations, until one day I had the epiphany that I could probably cook it longer and make a pizza dough out of it.
It worked. Like magic.
Saucy….
I just use a canned tomato sauce, I added my seasonings, and my toppings of choice. A Mozzerella, and some tomatoes I sauted before I put my dough in, and some pepperoni, and chicken leftover in the fridge. And then I leave it in the pan until it stiffens up and get just a tiny bit ‘blackened’ on the bottom. Not burnt, but the tiniest rings of char. This is pretty impossbile to get a picture of for you so you just have to imagine it for yourself and check it a few times until you’re comfortable with it.
Sourdough or just the discard?
I have been baking sourdough bread and other miscellaneous sourdough things for several months now. But I am fully convinced if you want to just get starter from someone and simply keep it and feed it to use it as discard, that is ABSOLUTELY VALID. There are so many great ways to use sourdough discard, and you would never even have to bake bread if you didn’t want to.
