3 Ingredient Flour Free Dairy Free Peanut Butter Cookies

Easy peasy peanut butter cookies!

I discovered this recipe shortly after I got married, well, a long time ago. It quickly became my husband's favorite cookie. This is the only thing he requests for Valentine's and our anniversary, every year. It takes about 10 minutes from the bowl to the oven. And the best part it's naturally Gluten and Dairy Free! There is no flour, so you don't even have to use a GF replacement blend! There is no dairy and no gluten! That means everyone in my house can eat it without me having to make any special accommodations. What a relief!

3 Ingredient Peanut Butter Cookies

Gluten Free, Dairy Free

INGREDIENTS

  • 1 Cup Peanut Butter

  • 3/4 Cup Sugar

  • 1 Egg

  • 1/4 Cup Sugar for topping

INSTRUCTIONS

  1. Dump ingredients in the bowl

  2. Mix by hand, do not use a mixer, do not overmix

  3. Use a spoon or cookie scoop to scoop onto cookie sheet

  4. Gently press fork or meat tenderizer into a cookie, BEFORE dipping into the sugar for the first time. This makes sure the sugar sticks

  5. Dip sticky fork or tenderizer, into the sugar and then into the cookie. Repeat until they are all done.

  6. Bake at 350 degrees for 8-11 minutes until the edges start browning,

  7. They will be soft when they come out, leave them on the pan to finish baking and cooling.

  8. You can add chocolate chips if desired
